Every March, the American Dietetic Association (ADA) promotes healthy nutrition with National Nutrition Month. This year’s theme is “Eat Right with Color” meaning we should all incorporate a rainbow of colors on our plate. Eat fruits and vegetables that are yellow, orange, red, green, blue and purple. The more colors, the more vitamins and minerals you’ll take in at every meal. Check out these tips for incorporating color with salad.
I try to get at least seven fruits and veggies of different colors in my diet every day. Today I had blueberries, dark green romain and red and yellow peppers, red tomatoes, pink grapefruit, white cauliflower… but I still missed purple. I’ll have to make sure I add some in tomorrow. How do you get a rainbow of colors in your diet everyday? If you aren’t yet, you should.

Corned Beef and Cabbage Quesadillas
Serves 4
1/2 cup Wildtree Fiesta Salsa Mix, prepared

1/2 cup sour cream

2 cups shredded cheddar cheese

1/2 pound thinly sliced corned beef

3 cups packaged coleslaw mix
![]()
4 large flour tortillas (10-inch)

Preheat oven to 450 degrees F. Brush rimmed baking sheet with 2 tablespoons oil. In a small bowl, combine prepared Fiesta Salsa and sour cream. Sprinkle 1/4 cup cheese over half of one tortilla. Place 3/4 cup coleslaw mix on top of cheese. Drizzle about 3 tablespoons salsa mixture over coleslaw. Lay a quarter of the corned beef on top of the coleslaw; top with 1/4 cup more cheese. Fold tortilla over to cover filling. Repeat with remaining tortillas. Transfer to prepared baking sheet and brush tops with 1/2 teaspoon oil. Bake until tops of quesadillas begin to brown, about 10 minutes. Flip quesadillas over, press with spatula and bake until crisp and golden brown on second side, 5-10 minutes. Cool quesadillas for 10 minutes before slicing.
Chicago Style Shepherds Pie Pizza
Serves 8

1 pound lean ground beef (my preference would be to
substitute a TVP or tofu product)

1 tbsp all purpose flour

2 tbsp Wildtree Our Own Ketchup

1 cup low sodium chicken broth

1 tbsp low sodium soy sauce
![]()
1 cup frozen mixed vegetables
![]()
3 cups day old mashed potatoes

2 eggs, beaten

2 cups shredded white cheddar cheese, divided

Preheat oven to 425 degrees F. Grease a 9 inch spring form pan.
In a large bowl, combine Pizza Dough Mix, water, Grapeseed Oil and 1 tbsp Garlic Garlore; mix until ball forms. Turn dough out onto a floured surface and knead for 2 minutes until smooth and elastic. Cover and let rest for 20 minutes. Roll the dough out into a 14-inch Circle and place into prepared pan. Sprinkle 1 cup cheddar cheese on the crust and set aside.
In a large bowl, mix together mashed potatoes, eggs and 1/2 cup cheddar cheese. Brown meat in a large non-stick skillet. Stir in flour and cook 1 minute. Add ketchup, broth and soy sauce; cook 5 minutes. Stir in mixed vegetables and cook an additional 5 minutes. Spoon into crust and top with mashed potatoes. Sprinkle with remaining cheese and bake for 20-25 minutes.

At first glance, some convenience foods may seem to be okay choices. But check out how many servings are in a box, a can or a cup. Marie Callender’s Chicken Pot pie has 520 calories, 11 grams of saturated fat and 800 mg of sodium – but there’s two servings in one pie which ups that to 1040 calories, 22 grams of saturated fat (more than a day’s worth) and 1,600 mg of sodium (a whole day’s worth).
Or sip on this… you could have a McDonald’s Quarter Pounder with Cheese or a Starbucks Venti White Chocolate Mocha with 2% milk and whipped cream. In total, you’ll drink 580 calories and 15 grams of saturated fat.
Just remember – there’s usually more than one serving in a prepared food package and liquid calories can add up fast.

Did you know that most stick margarine are about as bad for you as butter because of the partially hydrogenated vegetable oil? The trans fat in partially hydrogenated vegetable oil raises bad cholesterol, lowers good cholesterol and promotes heart disease. Use the real stuff in moderation or better yet, use a healthy oil like grapeseed, flaxseed or olive oil instead.

Fruits and oatmeal … sounds like a healthy option. And in comparison to most of McDonald’s menu, it’s a better option, but not necessarily a good substitute for the original. I saw the commercial for it and I really wanted to head out and give it a try, but decided to check out it’s nutrition info first.
It has 140 more calories per serving than old fashioned oatmeal (but it does have fruit and cream too). Without the fruit, etc. it’s still 40 calories more than regular oatmeal… not too bad. But then, it has 160 mg of sodium too, compared to 0? I guess its got some preservatives then? And it does – listed right on the ingredients…. all 7 of them in the oatmeal (22 ingredients in the entire fruit and oatmeal combo). Compare that to 1 ingredient in old fashioned oatmeal.
I wouldn’t go out and start eating McDonald’s oatmeal everyday for breakfast, unless your typical breakfast is something like sausage egg mcmuffins. Stick with the original oatmeal – its healthier in every way. Add your own apples, still a good option. In a pinch, the McDonald’s oatmeal could get you through a breakfast, just don’t make it a habit.

I’ve heard this before, and I just heard it again at the busy post-New Year’s resolution filled gym… “I can’t do weight training yet, I’m just doing cardio to tone up first.” Toning doesn’t happen with cardio folks. If you want to change your shape – and tone – you need to lift weights, that goes for women too, who are usually more resistant to weight training. Don’t get me wrong, you need to do cardio to stay in shape and lose fat, but you’ll stall your fat loss and you won’t get the toned results you’re looking for without weights.
If you’re just doing cardio, you’re eventually cutting into your muscle mass. Muscle mass boosts your metabolism – the more you have, the more fat you burn working out and at rest. And cardio alone will just give you a smaller version of your current shape. Say for example you don’t like your thighs, you still won’t like them because they’ll shrink proportionately with the rest of you doing cardio alone.
To effectively lose weight and change your shape you need a weight training program along with cardio and a clean diet. I know this works – for as long as I can remember keeping track, my measurements placed me in the “apple shape” category. I had more fat on my abdomen than thighs – which put me at higher risk for heart disease and other health issues. When I started focusing more on weight training, not only did I finally start losing weight, I changed into a “pear shape” … my abdomen was no longer the ‘fattest’ part of me.
So keep the healthy lifestyles on track … and be sure to pick up the weights while you’re at it.
